Thank goodness I love being active because I also love to eat! This time of year I am particularly draw to classic comfort foods. Meatloaf, macaroni and cheese, pasta of any sort and baked goods. I can’t get enough bread!
It is also the time of year when it seems to be the body’s desire to wrap itself in a comforter and snuggle in until the Robins return. I don’t think there is any point in really fighting it but as with all things, moderation is the key.
Denise has already posted a recipe for a delicious enchilada pie. I thought I would share one of my favourites, Chicken and Vegetable Stew with Parsley Dumplings. It is from Anne Lindsay’s cookbook, Light Kitchen.
I have modified the recipe slightly by sauteing the vegetables and herbs before adding the broth. I find it brings out the sweetness of the root vegetables. I also will add other vegetables like parsnip, cabbage and fennel. I use No Salt Added chicken broth.
Just a bit of an aside. I have found a farm that specializes in lavender products but also grows wonderful herbs. Their dried herbs are amazing. It is Prince Edward County Lavender It is a great place to visit.
