Chicken and Vegetable Stew with Parsley Dumplings

Thank goodness I love being active because I also love to eat!  This time of year I am particularly draw to classic comfort foods.  Meatloaf, macaroni and cheese, pasta of any sort and baked goods.  I can’t get enough bread!

It is also the time of year when it seems to be the body’s desire to wrap itself in a comforter and snuggle in until the Robins return.  I don’t think there is any point in really fighting it but as with all things, moderation is the key.

Denise has already posted a recipe for a delicious enchilada pie.  I thought I would share one of my favourites, Chicken and Vegetable Stew with Parsley Dumplings.  It is from Anne Lindsay’s cookbook, Light Kitchen.

Anne Lindsay's LIght Kitchen CookbookI have modified the recipe slightly by sauteing the vegetables and herbs before adding the broth.  I find it brings out the sweetness of the root vegetables.  I also will add other vegetables like parsnip, cabbage and fennel.  I use No Salt Added chicken broth.

Just a bit of an aside.  I have found a farm that specializes in lavender products but also grows wonderful herbs.  Their dried herbs are amazing.  It is Prince Edward County Lavender  It is a great place to visit.
